Carbon dioxide is a by-product that is produced during the fermentation of wine. Since the density of carbon dioxide is heavier than that of air, it can easily overflow from the fermentation tank. If it falls to the floor of the winery, it forms deadly and undetectable gas fields that pose a great danger to staff safety. |

With our system, CO2, temperature, humidity and barometric air pressure are continuously measured and recorded wirelessly at various points. And all in one device! If defined limit values are exceeded, the system immediately sends an email informing you of the irregularity. |

By measuring various interrelated parameters, a holistic picture of the current state of the room is obtained: |

- Carbon dioxide (CO2)
During alcoholic fermentation in wine production, yeasts convert sugar into alcohol and carbon dioxide. This produces a considerable amount of CO₂, which often escapes as a gas in closed fermentation tanks. In open fermenters, it escapes directly into the environment.
- Temperature
The temperature during fermentation is crucial for the development of aromas and the balance of the wine. Excessively high temperatures can kill the yeasts or produce unwanted aromas.
- Humidity
The right humidity helps to maintain the integrity of the wine during storage. It influences the rate of evaporation and the interaction of the wine with the oxygen in the bottle or barrel. An optimal humidity level helps to develop the desired aromas and flavors during aging.
- Barometric pressure
Barometric pressure can indirectly influence the rate of fermentation. At low air pressure, as occurs at higher altitudes or when the weather changes, carbon dioxide (CO₂) can be released more quickly during fermentation.

This combined data in combination with alarm triggers means that the situation can be assessed very well around the clock and alarms can be raised immediately if necessary. This system therefore makes a very good contribution to quality assurance in wine production.
